Rice to taste
Spinach
Olives
Tomatoes
Anchovies
Preparation
1. Sauté an onion and garlic.
2. Add the rice, sprinkle with broth in the proportion required by the variety of rice chosen and cook long enough.
3. Drain and serve.
4. Add olives, anchovies, spinach, and diced tomatoes.
5. Serve the salad cold, dressed with oil, salt and balsamic vinegar.
